I don't eat sweet potatoes or vegetables, i.e. beans, peas, any kind of squash, rootabeggas, brussel sprouts, broccoli-rarely, asparagus....none of it. My lack of healthy eating choices makes me even more encouraged to feed my family healthy meals. One of the easiest, healthiest, simple meals I make is a baked sweet potato. I take the sweet potato out of the bag, place it on a piece of tin foil on a cookie sheet and pop it in the oven. I set the temp to 400-425...depending on the size and amount of potatoes and wait til I smell them
(this one medium sized one took about an hour and fifteen minutes at 400 to bake. If you have a cold or your nose is stopped up, I recommend setting a timer!) and the peeling dents when you press it with your finger and usually oozing juice at the bottom of them.

I will pop two of these in the oven during breakfast or during naptime. I pack them in a lunch box if we are going to be out or let them cool on the stove til lunch or supper. If I let them cool long enough I can cube it up like this for Andrew to feed himself. Today he ate the whole thing by himself-my little piggy!
For you mommies with young ones, this was one of the first things I fed to Andrew as a baby...probably between 4 and 5 months, I just baked it, cooled it and mooshed it up for him with my fork. Warning: produces similar looking diapers! LOL

I'm so happy you posted this! I've been serving undercooked sweet potatoes forever! Maybe this week we can actually eat them!
